City Tech Graduate Chef Takes 3rd Place Honors in International Competition

Ebow Dadzie ’03, a graduate of City Tech’s award-winning hospitality management program, took 3rd place honors in the 2006 International Restaurant & Foodservice Show of New York’s pastry competition at the Javits Convention Center in early March. In competition with 18 of the city’s top pastry chefs, Dadzie prepared a colorfully air-brushed dessert that was a merger of sour cherry jelly and a lavender Bavarian in a layered construction of chocolate ganache and chocolate cake.

Dadzie, 24, who is currently the assistant pastry chef at the Grand Hyatt Hotel in Manhattan, will be taking the helm as co-owner and chef/director of Folukie restaurant, which will open on Bedford Avenue in Brooklyn this summer. He has been in the kitchen since age 8, when his grandmother began teaching him to cook for the family. Dadzie says that he loved preparing the desserts best of all.

After enrolling in City Tech’s hospitality management program, his love for desserts became a passion. Wanting to learn first-hand all about the French pastry arts, he later spent three months at study in Castera Verduzan in the southwest of France. He was a member of City Tech’s award-winning student team at the 2003 International Hotel/Motel & Restaurant Show culinary and pastry arts competitions and recipient of a 2003 Brooklyn Eats Scholarship from the Brooklyn Alliance, a non-profit, economic development affiliate of the Brooklyn Chamber of Commerce. Brooklyn Eats is a popular annual foodfest that attracts a food-loving crowd from throughout New York City. Both of Dadzie’s parents are City Tech graduates.

City Tech has been involved with the International Restaurant & Foodservice Show of New York for many years. This year, Department of Hospitality Management Chair Francis Lorenzini served as chair and president of the Selection Committee and president of the Jury, while Confectionery Arts Professor Louise Hoffman was captain of the Tasting Team. Students enrolled in City Tech’s advanced pastry classes assisted the teams under the direction of Hospitality Management Professor Liz Schaible.
