Hospitality Management Professor Frank Costantino is ACF National Champion

Hospitality Management Professor Frank Costantino '86 is the 2002 winner of the American Culinary Federation's (ACF) National Championship held this summer in the MGM Grand Garden Arena in Las Vegas, Nevada. The competition, sponsored by Tyson® Chicken, featured four chefs whose recipes were chosen in a national recipe contest.
The four chefs prepared their recipes in a one-hour competition under ACF guidelines and the careful watch of ACF judges. The pressure is intense as the annual event also has some 1,000 of the nation's top chefs and other culinary experts looking on.
Costantino's entry was a warm summer luncheon entrée: Steamed Chicken Breast with Watercress Mousseline, Toasted Israeli Cous Cous Salad and a Roasted Chicken Pan Vinaigrette. The judges especially enjoyed the fresh flavors and textures of the dish, awarding Costantino the ACF Gold Medal and 2002 National Championship.
Professor Costantino, a City Tech graduate and
faculty member for the past 12 years, is a certified executive chef,
culinary educator and member of the ICA-ACF Big Apple Chapter of
the American Culinary Federation. He has completed a master's degree
from Rochester Institute of Technology and earned an EdS from the
University of Sarasota. Before joining the City Tech faculty on
a full time basis in 1991, he was a chef at La Caravelle, Windows
on the World, HBO headquarters and, most notably, served as executive
chef at Quatorze.
